La naissance du nouveau millesime ! The birth of the new vintage !

Depuis quelques jours deja nous sommes en plein dans la période des décuvages.
Les raisins rouges entrés une vingtaine de jours plus tôt sont passés par plusieurs phases. Tout d'abord la macération préfermentaire à froid, cette étape permet d'extraire une premiere partie des composés des raisins. Celle ci comme indiqué se fait a froid et avant que la fermentation n'ai débuté, de cette maniere nous concentrons l'aspect fruités et souple du vin ainsi que de la couleur.
Since a few days already we are shoveling out tanks of red wines.
The grapes that came about 20-30 days ago went through several phases. First the cold soak maceration, this step permits the extraction of the first components in the skins at a cold temperature and to get a fruitiness before the fermentation starts.




La seconde phase dure plusieurs jours, c'est la fermentation, la transformation des sucres en alcool par les levures. Durant toute la durée de la fermentation nous effectuons plusieurs remontages, ils permettront d'extraire la couleur, les tannins et créer le corps du vin.
The second phase lasts several days, this is called fermentation, sugars are being transformed into alcohol by the yeasts. During this period we have several operations like pump-overs every day, they permit to continue the extraction of the tannins, color, aromas and body of the wine.



Dès que la fermentation est terminée nous entrons dans la 3ème et derniere phase, la macération post fermentaire, durant celle ci les mouvements du vin seront plus legers, on obtiendra le gras et la rondeur des tannins. A partir de la il est important de déguster régulièrement les cuves pour trouver le meilleur équilibre et déterminer la date de décuvage.
A soon as fermentation is finished we enter the 3rd and last phase, the post fermentation maceration, during this one the wine will be moved less, we will obtain the fatness and roundness of the tannins. It is very important to keep tasting the tanks often to find the best balance of the wines and decide when to shovel out the grapes.



Le décuvage représente la naissance du vin nouveau, il n'y a plus de sucre, on ne parle plus de jus mais de vin! Cette année les raisins etaient d'une belle concentration et nous ont permis de créer des vins de très belle qualité. Cet hiver quand le vin nouveau se sera reposé nous procederons aux assemblage, le melange de differentes cuves donnera des vins équilibrés et complexes.
Shoveling out the tanks means the birth of the new vintage; there is no more sugar, we do not say juice anymore but wine ! This year grapes were very concentrated and gave us the chance to create wine of very high quality. This winter after the wines have rested a little, we will start the blends, blending different tanks to create complex and balanced wines.

Les cuves sont pleines ! Tanks are full !

Nous voila proches de la fin ! Il ne reste plus que quelques parcelles de vignes à vendanger et tous les raisins seront bien au chaud dans leurs cuves.
Here we are, close to the end ! There are only a few blocks left to harvest and all the grapes will be in their tanks.



Tout sera beaucoup plus calme dans les vignes mais dans la cave c'est une autre histoire ! Le travail va continuer pendant quelques semaines encore. Pour les rouges rentrés en 1er l'heure du décuvage approche !! Pour les autres on continu tranquillement avec remontages et delestages afin de tirer le meilleur des raisins.
It will be much calmer in the vineyard but in the cellar that's another story ! The work will still last a few more weeks. For the first red tanks the time of shoveling out the grapes is getting close !! For the others we keep working with the pump-overs to extract the best out of our grapes.

Tout se passe bien !! Everything is all right !!

On entre dans l'automne et nous sommes toujours occupés à vendanger nos raisins, depuis le début des vendanges nous n'avons pu que constater la très belle qualité des raisins; le millésime 2010 se présente déja très bien !
We are entering Autumn and still busy receiving our grapes, since we started we had the opportunity to see over and over again the very great quality of the grapes; 2010 vintage already smells perfect !

Depuis le dernier article les choses ont pas mal avancés ! Les 1eres cuves de blanc sont finies et n'attendent plus que la filtration, les rosés voient le bout du tunnel et nous avons rentré plus de la moitié des rouges.
Since the last post things have changed a bit ! The first tanks of white wine are done and waiting for filtration, rosé wines are seeing the end of the tunnel and we received over half of the red grapes.

Nous avons également récolté les parcelles qui donneront la Cuvée Prestige, ci dessous vous pouvez voir la machine dans les Grenaches.
We also harvested the blocks that will give the Cuvée Prestige, under you can see the harvester harvesting the Grenache.





Durant toute la récolte nous vérifions la qualité des raisins mais également la maturité, de cette manière nous ramassons les raisins au stade optimum.
During the harvest we make sure of the quality of the grapes and also the ripeness, in this way we harvest at the optimum stage.



Nous avons également commencé les vendanges au Domaine des Santonilles, c'est donc une période chargée avec les opérations sur les rouges. Chaque jour nous devons faire un remontage sur les cuves, cela veut dire que nous pompons le jus au bas de la cuve et le renvoyons par le dessus sur les raisins; de cette manière nous favorisons l'extraction des composés comme la couleur, les tannins, aromes...
We started to harvest at the Domaine des Santonilles as well, this is a busy time with all the operations on the red tanks. Every day we have to do pump-overs on the tanks, it means that we pump the juice from the bottom of the tank and send it back over the top on the grapes; in that way we favorise the extraction of components like colour, tannins, aromas...

Soyez encore un peu patients, le prochain épisode video va bientot arriver, dans celui ci je vous expliquerai l'arrivée des raisins rouges à la cave et leur parcours !

Des arômes intenses envahissent la cave ! / Intense aromas take over the cellar !

Les blancs sont tous dans les cuves et nous sommes entrain de faire les rosés !
All the whites are in tanks and we are now making the rosés !

Certaines cuves sont déja bien avancées dans le stade de la fermentation et nous pouvons sentir d'intenses arômes envahir la cave.
Some tanks are already far in the process of fermenting and we can smell intense aromas invading the cellar.

Chaque jour commence avec la tache la plus pénible ... déguster les cuves ;) !! Nous devons nous assurer que tout se passe bien et que les levures font bien leur travail.
Every day starts with the hardest task ... tasting the tanks ;) !! We have to make sure that the process is going well and that the yeasts do their job well.

Pour aider nos petites levures nous devons leur apporter de l'oxygene, sans celui ci elles ne pourraient pas travailler correctement.
C'est la que nous faisons un remontage, brassage du jus dans un récipient ouvert, le jus va s'aérer et donc apporter l'oxygene necessaire.
To help the yeast we have to give them oxygen, without this one they could not work in good conditions.
This is when the pump over happens, the juice falls into an open container, it will aerate and bring the necessary oxygen.

2ème épisode: L'arrivée des raisins à la cave

Bonjour à tous !! Hello to all !!

Voila la seconde vidéo, après un court voyage en tracteur les raisins arrivent à la cave, découvrez leur parcours en vidéo !!
Here is the second video, after a short drive in tractor the grapes arrive at the cellar, discover their journey in this video !!




Translation in english:

"Hello and welcome to the Chateau Saint Nabor blog, today I will talk about receiving the white grapes in the cellar.

The grapes arrive in bins like you saw in the previous episode. First the grapes are dumped into a receiving bin, here we separate the first juice that goes in the cellar from the grapes that are sent in a destemmer.
The purpose of the destemmer is to separate stems and other items like shoots and leaves, in that way we keep only the berries. Those are sent to the press with a pump.

We use a pneumatic press, inside there is a membrane that will inflate and press the berries against drains, we will increase slowly the pressure to reach 2 bar / 30 psi. At this low pressure we get only the finest juice and save the finest aromas.
During the whole process the juice is protected from oxygen.
It is now sent to a tank and kept at a cool temperature.

After racking, operation that consist of separating the big lees like pieces of skin and leaves from the clear juice, this juice is inoculated with selected yeasts, the yeasts will transform the sugar into alcohol, this is called alcoholic fermentation, this process wil take about 10 days.

"Welcome to the Chateau Saint Nabor Blog, today I will talk about the Harvester machine.
It takes us 5 weeks 7days a week to harvest our 140 hectares.
The harvester works on a simple principle: a ripe fruit will naturally fall from the tree, in our case the machine shakes the vine to make the fruit fall.
The Chateau Saint Nabor has been using a harvester machine for over 25 years now, in this philosophy the vineyard has been established to optimise the mechanical harvest.
Every year the harvester goes through a total check up to insure the good fonction of the machine.
Today we are proud to say that the quality of the harvest is as good as if it was hand picked.
