2ème épisode: L'arrivée des raisins à la cave

Bonjour à tous !! Hello to all !!

"Hello and welcome to the Chateau Saint Nabor blog, today I will talk about receiving the white grapes in the cellar.

The grapes arrive in bins like you saw in the previous episode. First the grapes are dumped into a receiving bin, here we separate the first juice that goes in the cellar from the grapes that are sent in a destemmer.
The purpose of the destemmer is to separate stems and other items like shoots and leaves, in that way we keep only the berries. Those are sent to the press with a pump.

We use a pneumatic press, inside there is a membrane that will inflate and press the berries against drains, we will increase slowly the pressure to reach 2 bar / 30 psi. At this low pressure we get only the finest juice and save the finest aromas.
During the whole process the juice is protected from oxygen.
It is now sent to a tank and kept at a cool temperature.

After racking, operation that consist of separating the big lees like pieces of skin and leaves from the clear juice, this juice is inoculated with selected yeasts, the yeasts will transform the sugar into alcohol, this is called alcoholic fermentation, this process wil take about 10 days.
